Oh So Spicy Buffalo Chicken Wings


Spicy Buffalo Chicken Wings

Do you like 'em hot?  Or maybe you like them mild.  Whichever way you prefer to eat your Buffalo Wings, be sure to use this recipe!  It's a winner and I only had to alter the spices to get them that way! You can also control the heat by varying the ratio of butter to hot sauce.  Less butter equals spicy hot, while more butter gives you less heat.  Fully read the recipe right before you prepare them, to make sure your's come out perfect too! 

Ingredients 

1/2 cup wheat flour 
1 1/2 t. smoked paprika
1 1/2 t. cayenne pepper
24 chicken wings 
olive oil for frying
1 stick butter
1/2 c. Frank's Hot Sauce 
6 turns from a pepper grinder
1 t. garlic powder 

For the coating:  

Mix together the flour, paprika and cayenne pepper.  Coat all your wing pieces and place into a shallow pan.  Cover and refrigerate for at least 60 minutes.  Do not skip this step, it allows the coating to stick to the chicken and gives the chicken a nice crispy coating in the frying pan.  




For the sauce: 

Melt the butter, add Frank's Hot Sauce and the garlic powder.  

Cook the chicken

Heat the oil in a deep fryer or frying pan to 375 degrees.  Use a heat thermometer to check the temperature. Be sure to have enough oil to cover the wings. Cook for 10 to 12 minutes or until the chicken becomes a really nice brown color.   Remove the wings and drain on some paper towels.  Place the wings into the sauce, soaking them completely.  Remove to a serving platter.  

* Depending on the size of your fryer or pan, you may only be able to cook a portion of the wings at one time.  

** Remember that you can alter the heat of the Buffalo Wings by varying the ratio of the butter and hot sauce.
