Hearty Lentil Soup
What could be more comforting on a cold and windy day than soup? Maybe hot chocolate with marshmallows, but sometimes we need something will a little more sustenance to get us through the day.
Ingredients
1 t. dried thyme
2 t. dried tarragon
1 t. smoked paprika
1 t. minced garlic
8 baby carrots, diced small
1 stalk celery, diced small
1 medium onion, diced small
2 cans diced tomatoes (14 oz)
7 c. chicken broth
1/8 t. black pepper
1 1/2 c. dried lentils
Directions
In a large stock pot, add the diced carrots, celery, onion, chicken broth, tarragon, pepper, thyme, smoked paprika and both cans of diced tomatoes. Bring to a boil. Reduce heat and simmer until the diced vegetables are tender. Add the lentils and cook until they are soft.
Soup is very easy to make and very forgiving...feel free to add a bit more spice, chicken stock or vegetables to your soup.
