Grilled Turkey Stuffed Portabella Mushrooms


Stuffed Turkey Portabella Mushrooms

I almost had a small panic attack when I couldn't locate the recipe for these delicious stuffed mushrooms!  Luckily I found it and now it will be here for safe keeping!   This recipe is from sparkrecipes.com under Incredible Portabello Stuffed Mushrooms.  I think they are incredible also. Robbie thinks these are even better the next day.  P.S. Did you know that can correctly spell this type of mushroom 3 different ways?  ...Portabella, Portabello and Portobello! Whichever way you spell it, they are good!  

Ingredients

6 Portabella mushroom
1 lb. ground turkey
2 c. spinach 
1/2 c. chopped onion
1 t. minced garlic 
2 t. lemon juice
3 T. light soy sauce
2 t. olive oil
1/2 t. chili powder
1/2 c. italian seasoned bread crumbs
4 T. chicken broth
1/2 c. mozzarella cheese 


Directions 


Clean the mushrooms and pat dry with a paper towel.  Remove the fins and core the cap out of each mushroom.  Chop the removed sections into smaller pieces.  Set the pieces aside.  


Cook the ground turkey and drain off any fat.  Set aside.  In another frying pan, heat 1 t. olive oil.  Add the diced onion, mushroom bits, garlic and spinach until cooked.  Mix in the chili powder, bread crumbs and chicken broth. Mix it all with the cooked turkey.


While the turkey is cooking, grill the portabella mushrooms.  A small George Forman grill works great!  Once they are grilled, place them on a foil lined cooking sheet for easy cleanup.  In a small bowl mix the rest of the olive oil, soy sauce and lemon juice.  Soak each mushroom in the mixture and return to the pan.  


Place the turkey mixture on top of the mushrooms.  This takes a bit of patience as you are not really filling a cavity and the turkey will want to fall off the mushroom.  Don't worry, the turkey mixture is moist and you will be able to pat a good portion of it on top.  Top the stuffed mushroom with mozzarella cheese. 



Bake at 250 degrees to melt the cheese.  After the cheese is melted, turn your oven to broil to make them nice and brown.  This only takes a few seconds, so watch them carefully and turn the pan occasionally for even browning.

***  You may have leftover turkey mixture.  If so, just refrigerate or freeze for another day.  I ate mine over leftover spaghetti noodles!  YUM!!!
