Mashed Plantain - Dominican Republic Mangu


Mangu (back right) is made with plantains and sauted onions. 
 It is a staple dish in the Dominican Republican.   

This recipe is for 2 servings.  If you need more just double the recipe.

Ingredients

1 ripe plantain
1/2 t. melted butter
1/2 onion
1 T. olive oil 
1 T. apple cider vinegar
pepper to taste

Directions

Slice the plantain into long pieces and boil in a small saucepan until tender.  


                                      Slice the onion.  Cook until tender in 1/2 -1 T olive oil.


  Once the onions are slightly browned, add 1 T. apple cider vinegar and a little pepper.


Remove the cooked plantains from the saucepan.  Reserve a little of the cooking liquid. 


 Mash the plantains with the back of a fork.  Add a little of the reserved cooking liquid to hold it all together.  Add 1/2 t. of melted butter, if desired.

Top the mashed plantains with the sauteed onions.  
Serve with a side of scrambled eggs with salsa and tortillas.

French Toast Rollups


Just for fun! Pick a filling and roll it up into your french toast!  

Ingredients

6 slices of white bread
Strawberry Jam
Cream Cheese
1/2 T. butter
1 egg
1 T. milk
cinnamon sugar
Optional: powdered sugar and syrup


Directions

Cut the crust off the bread slices.
(Set the crust aside, it makes great croutons for salads!)  


Use a rolling pin to flatten each piece of bread.  If you don't have a rolling pin, simply flatten the bread with the palm of your hand.  


Spread a thin layer of cream cheese and jam onto the bread.  Add a bit more to one side. This will be the end that you will start the roll.  Work your way to the other end. 


Pinch to close.


Roll the rest so you can cook them all at once.  
Melt the butter in a large skillet.  Dip each rollup into the beaten egg with milk.  
Place the rollups seam side down into the skillet.  Turn and cook on all sides.


Remove from the skillet and roll in the cinnamon sugar.  
Sprinkle with powdered sugar, if you like.
Serve with warm syrup.

Chipotle Sour Cream Chicken Enchiladas



Easy and Tasty! 

Ingredients

1 large can of cooked white meat chicken
1 c. mild cheddar cheese
10 corn tortillas
1 c. sour cream
3 T. flour
1 T. cornstarch
3 T. butter
2 c. chicken broth
2 diced chipotle peppers
1 T. chipotle sauce
1 1/2 c. cheddar cheese
1 slice fresh jalapeno

Directions 

In a small bowl mix together the chicken and cheddar cheese.  Place some of the chicken and cheese mixture into each tortilla and roll.  Place each rolled tortilla into a greased baking pan.  In a large saucepan, melt the butter.  Add the flour and mix.  Stir in the chicken broth and simmer until it thickens. Use the cornstarch if you need the sauce to thicken more.  Mix in the chipotle sauce and peppers. 


Remove the saucepan from the heat and allow the sauce to cool before adding the sour cream.  Add the sour cream when the sauce is just warm. 


Pour the sauce over the rolled tortillas.  Cover with the remaining cheese and put the jalapeno slices on top. 

 Bake at 400 for about 20 minutes. Broil for a minute or two until the cheese is nice and brown.

Kristen's Chocolate Bourbon Pecan Pie


Texas Pecan Pie

Ingredients 

1 c. 100% pure cane syrup
4 T. butter
1 c. pecan halves
8 Hershey's Baking Melts
1/2 T. vanilla
1/2 T. bourbon
4 eggs
1 pie crust



Directions

Place the sugar and the butter into a large saucepan and melt the butter on low heat.  Add the chocolate baking melts, stirring until they also melt.  Remove the saucepan from the heat.  Add the bourbon and vanilla.  Allow the mixture to cool.*  Add the 4 beaten eggs to the mixture and mix well. 

*This step is very important.  If the mixture is too hot when you add the eggs, the eggs will cook leaving bits of scrambled eggs in your pie filling.  


Pour it into the pie crust.  You might want to add additional pecan pieces to the top of the pie.  Bake at 350 degrees for about 55 minutes.  The pie will be a little puffy when you remove it from the oven, but it will flatten after it cools.

* Kristen's pie contains 1 c. sugar,  8 T. butter and 1 c. light Karo syrup (instead of 1 c. cane syrup and 4 T. butter)

Momma's Favorite Cole Slaw


 

When I was younger, I used to work in a restaurant.  This is my version of Elby's recipe.  

Ingredients

1/2 head of cabbage
1/2 c. diced carrots
3-4 green onions


Dressing  

1/2 c. mayo
2 T. vinegar
4 t. sugar
1/4 t. black pepper
1 T. dried parsley 


Directions 

Chopped all the vegetables up and put into a medium bowl.  Measure the dressing ingredients and mix well in a small bowl.  Pour the dressing over the slaw and mix well.

Broccoli and Raisin Salad


Delicious and loaded with vitamins, minerals and protein!  Yes protein! Broccoli has 3 grams per one serving!  This recipe is from Dr. Josh Axe.  



Ingredients

1 bunch broccoli florets
1/2 c. mayo
1/4 c. sunflower seeds
1/2 c. raisins
1/2 c. diced green onions
2 T. red wine vinegar
Optional:  stevia to taste 



Directions

Cut the broccoli florets into small pieces.  Add all the other ingredients and mix.  It tastes great right away, but even better the next day.
